No Gluten? What Can I Eat?

So often I am asked this question by friends newly diagnosed with celiac or a wheat allergy. "What can I eat?" The truth is, there are gluten free substitutes for just about anything, but they are generally far more expensive, and harder to make from scratch than their gluten counterparts. I will be sharing many of the gluten free recipes I've developed over the past ten years of being a celiac, but they represent occasional treats, not our every day fare. So what do we eat on a daily basis?

  • Meat: think baked chicken, steaks, burgers with lots of veggies, meatloaf, meat balls and roasts
  • Veggies: we have a fresh salad at least one meal a day, and a variety of steamed or sautéed vegetables. Fresh carrots, snow peas and peanut butter celery make great snacks!
  • Potatoes and Rice: I love how versatile potatoes are and hubby loves them! Mash them, boil them, bake them, fry them!
  • Cheese: if you can have dairy, cheese is loaded with protein with no gluten and zero carbs, the perfect snack. What more can you ask for?
  • Nuts and Seeds: another high protein, no gluten snack
  • Fresh Fruit: Did you know that fresh fruit doesn't affects blood sugar nearly as much as cooked fruit? As a diabetic, fresh fruit is one of my best friends!
  • Taco Dishes: Corn chips, corn tortillas and hard shell tacos all make a budget friendly gluten free meal easy as pie! Cook up some ground beef, chicken or make homemade refried beans.
  • Eggs: boiled, fried, egg salad, potato salad, scrambled eggs with sautéed veggies, the list goes on!
